2-3 round green or yellow zucchini, cut into 1/4 thin rounds
Extra virgin olive oil
Salt and freshly ground black pepper
2/3 cup of your favorite tomato sauce
1/4 grated mozzarella cheese
1/4 grated parmesan cheese
Canned or fresh mushrooms
Canned, sliced black olives
Preheat oven to 425 degrees (or prep Pizazz Pizza oven). Brush both sides of the zucchini slices with oil and arrange on baking sheet. Sprinkle with salt and pepper to taste. Roast for seven minutes or until slices are just tender when pierced with a fork.
Meanwhile, in a small bowl, combine the tomato sauce, mozzarella, parmesan, mushrooms and olives. Add salt and pepper to taste.
When the zucchini is ready spread one spoonful of the sauce mixture on each zucchini slice. Return to the oven (or Pizzaz) and roast until the cheese is melted and the sauce is heated through, two to three minutes.
