1 1/2 cups white sugar
1 cup vegetable oil
4 eggs (unbeaten)
1 tsp vanilla
2 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
2 cup raw, grated zucchini
1 cup chopped nuts
Cream sugar and oil until fluffy. Add eggs, one at a time; beat well after each. Add vanilla. Sift dry ingredients together; add to mixture. Fold in zucchini and nuts. Pour into a greased 9×13 pan. Bake at 300 degrees for 1 hour, or until cake is set.
Frosting
Beat together 1/2 stick butter, 1 (8 oz) package of cream cheese, 2 tsp vanilla and one pound (3 1/2 cups) powdered sugar. Beat well. Spread frosting over cooled cake.
