Yesterday I brushed against the fresh basil in the greenhouse (which we planted at Blossom Town and is filling the pot out wonderfully!). My taste buds came alive at the thought of a fresh garden tomato topped with basil. Here’s a recipe I can’t wait to have this summer – an awesome blend of flavors and so quick and easy!! Go away snow – PLEASE!
Fresh Tomato Basil Salad
Ingredients:
Fresh heirloom or homegrown tomatoes, sliced (3-4 depending on size)
Fresh sweet basil, strip leaves from stems (about 1 cup, chopped and loosely packed)
Fresh mozzarella (1 lb., sliced into 1/4 inch slices)
Olive oil (approximately 1/3 cup)
Salt (to taste)
Fresh cracked pepper (to taste)
How to Serve:
Overlap a slice of tomato, a slice of mozzarella around your serving plate. Just slightly overlap each item. Chop fresh basil and sprinkle over the top.
Drizzle olive oil (or your favorite dipping oil) over the tomatoes, basil and cheese evenly. Salt and pepper to taste.
Best flavor when allowed to sit for 20-30 minutes and then served at room temperature.
